Classic restaurants are having a moment. In Brooklyn, Gage & Tollner was recently revived to its former glory as an ornate and bustling chophouse. They serve seven types of martinis, Parker House rolls, and Baked Alaska for two. Meanwhile, Horses is the hottest restaurant in Los Angeles (where I recently moved). The bistro is housed in what was formerly Ye Coach & Horses—an iconic Hollywood haunt—and does a brilliant job of bringing its past life into the present with sexy pops of color and cheffy fare, like a Caesar made with endive and spatchcocked Cornish game hen over warm dandelion panzanella.
And then there are the dining destinations that have endured for decades (centuries, even) which never go out of style. It feels like everyone I know wants to eat at Balthazar, New York’s buzzy SoHo brasserie that’s been slinging seafood towers and perfect French fries since 1997. Or slide into one of Musso & Frank’s alluring red leather booths and dig into a pink slab of roast prime rib. Whether a thirst for the classics is currently on-trend or forever in vogue, playing the game is always more fun when you dress the part.
